The ideal candidate must have a deep understanding of regional cooking techniques, local ingredients, and must speak fluent Italian to ensure authentic communication with our team and suppliers. Dishes should include:
Gundruk: A traditional fermented vegetable dish requiring specialized knowledge of fermentation methods.
Yomari: A sweet festival dish made from rice dough, filled with coconut and sesame.
Sel Roti: A unique ring-shaped rice bread prepared for festive occasions using traditional techniques.
Newari Khaja Set: A collection of traditional dishes from specific regional culinary practices, including Wo (Bara) and Choila.
Thukpa: A regional noodle soup with influences from neighboring cuisines, sometimes made with yak meat.
In addition to these regional specialties, the candidate must also demonstrate expertise in iconic Italian dishes, including:
Ragu alla Napoletana: A slow-cooked meat sauce from Naples.
Pizza Napoletana: Mastery in creating this traditional pizza with authentic ingredients such as San Marzano tomatoes and mozzarella di bufala.
